photo: Carl DedeCarl Dede has been a professional knifemaker since 1981. Each year he meticulously crafts 400 hand-made knives. Each blade is cut-out, hollow ground, heat treated, polished, fitted with a handle and sharpened. During his 30+ year tenure as a knifemaker, Carl has made more than 10,000 beautiful knives which are working away in kitchens all over the Intermountain West, the United States and far reaches of the world. That's a lot of good food and satisfied customers. Although most Dede Knives are for kitchen use, a few sporting knives are made each year.

Blades

Exceptional knives are made from high quality tool steel. Dede Knives are made using L-6 high carbon steel which has been recycled from large bandsaws and circular saws obtained from sawmills. This non-stainless alloy has some very desirable properties including the ability to take and hold an excellent edge that is easy to re-sharpen. Blades are heat treated to RC 61 after tempering. Unlike brittle stainless blades, these high carbon knives could last for generations.

Handles

A wide variety of hardwoods with a beautiful array of color and striking grain are used for handles. Commonly used woods include: maple, walnut, cherry, bubinga, purple heart, osage orange, rosewood, and bloodwood (see individual knife photos for choices). Handles are full tang construction with solid brass pins and liners. Each is meticulously sanded and varnished for a durable finish and smooth feel in the hand.
